Welcome to Rolling Gursha — where family, tradition, and authentic Ethiopian flavors come together.

We are a husband-and-wife team originally from Ethiopia who found our home in Huntsville, Alabama. Our journey combines two different professional paths brought together by a shared passion for food, culture, and community. I work as a systems engineer, while my husband brings years of culinary experience from helping operate a family-owned Ethiopian restaurant in Atlanta, where he developed a deep appreciation for the art of traditional Ethiopian cooking and hospitality.

At the heart of Rolling Gursha are the cherished recipes passed down from our mothers in Ethiopia. These recipes carry the flavors, traditions, and memories of home — from slow-simmered wots and perfectly seasoned tibs to the warmth of sharing meals around injera with family and friends.

The name Gursha comes from a beloved Ethiopian tradition where food is wrapped in injera and lovingly fed to another person by hand as a gesture of respect, love, hospitality, and connection. This tradition represents the heart of Ethiopian culture — sharing food as a way of bringing people together. “Rolling” reflects both our food truck journey and the act of rolling injera around flavorful Ethiopian dishes to create a gursha.

The name is also deeply personal to us. As the youngest children in our families, we both grew up being lovingly given gursha by our parents and family members around the dinner table. Those moments represented love, care, and togetherness, and they remain some of our most cherished memories from home. Through Rolling Gursha, we hope to share that same feeling of warmth, connection, and hospitality with our community.

Inspired by our heritage and our love for bringing people together through food, we created Rolling Gursha to share authentic Ethiopian cuisine with the Huntsville and Madison communities. Every dish is prepared with care, tradition, and the same hospitality that has always been central to Ethiopian culture.
